I think in one of the updates there was a note that said it was possible a while ago but I never learnt how

Not tracks, but clips on multiple tracks can be multi-selected. The easiest way is to use the V5 UI mode and press the Select button. Then you can tap on multiple clips to select them for move/cut/etc.
